Let’s start off that year of fewer regrets I was talking about. It’s 2018, a good time to start getting things done! It’s about time to do things that have long been neglected and put off, like a laundry list of—well, laundry is one of them. And for some reason, I have never made New England-style clam chowder before. Let’s knock this one off and keep on going strong.
“How do you cook clams?” is a question I’ve heard a lot from home cooks over the years so let’s get a few things straight: Clams are amongst the cheapest, tastiest, quickest- and easiest-to-cook seafood. They’re also resoundingly sustainable (you can do much worse with shrimp if you’re going the shellfish route). They help clean the ocean, they fortify us with minerals and omega-3’s, and they’re commonly found on restaurant plates. Especially with pasta. But you can have that at home easily, too.
Just because the holiday season is officially over doesn’t mean cooking has to return to a boring routine. I’ve resolved to cook more under-explored foods this year, and stood at the seafood stand at the market for about five seconds before deciding on clams. Why?
