		<description>We have an organic heirloom farm and grow beautiful beets and there is a roadside stand that  sells peaches which I frequently purchase.  I never thought about the peach and beet combination, and with the special delicious heirloom beets.  Yum.  Thank you.</description>

		<description>Hey, I made this salad and it was great. I added some fresh mint (from my fire escape!) instead of basil. Yummy. I had it as a side dish. I brought the left overs and added mixed greens for a salad at lunch the next day...so good. Try it!</description>

		<description>the peaches are what really make this dish extraordinary. I eat beets regularly &amp; love them, but the peaches were an excellent idea, and completely elevated this dish.  I also used a combo of golden &amp; red beets. Thanks for sharing!</description>
