We have an organic heirloom farm and grow beautiful beets and there is a roadside stand that sells peaches which I frequently purchase. I never thought about the peach and beet combination, and with the special delicious heirloom beets. Yum. Thank you.

Hey, I made this salad and it was great. I added some fresh mint (from my fire escape!) instead of basil. Yummy. I had it as a side dish. I brought the left overs and added mixed greens for a salad at lunch the next day...so good. Try it!

the peaches are what really make this dish extraordinary. I eat beets regularly & love them, but the peaches were an excellent idea, and completely elevated this dish. I also used a combo of golden & red beets. Thanks for sharing!

This is so yummy! I couldn't stop eating it at lunch. Great even without the peppers.
