As for quinoa and eggs, this is my favorite breakfast:

1 cup cooked quinoa (it is great cold)
1 chopped hard boiled egg
2 tsp olive oil (or more if you like)
tiny pinch of salt

Takes 30 seconds to make and is super satisfying.

Also, you can soak the hard boiled, chopped eggs in Olive oil over night and get the silkiest, loveliest treat.

If you need to add vegetables to your diet, this dish takes cooked greens, arugula, most fresh herbs, avocado, or tomato really well.

Try it!!
