To add to the health benefits, several studies have shown that dietary cholesterol (like that in eggs and shrimp) has very little if any effect on serum cholesterol. So if that was anyone's reason for avoiding eggs, they should eat up. Also, egg yolks are an excellent source of otherwise hard to find nutrients like choline. I personally think a plain omelette with jam is a lovely dessert, but I'm weird like that :)

Great article!! How about an egg tutorial for us?? I once read that Martha Stewart was asked to name the one food she could not live without on a desert island, and she named eggs!

Wa sei! These eggs are mighty purty. Makes me wonder why the eggs in Chinese jail had a special orangish/pinkish tint, like the dye from the shell was leaking through to the white.

You want to eat cheap? Let me tell you what they do in jail... they cut up potatoes and boil them in imitation meat broth. For variety, they cut up cabbage and boil it in imitation meat broth. You can soak up the flavor with mantou.

Man, I gotta get you to cook for me.

Yours truly,
XO,
The Chinese Prisoner

"How could this common food, which typically weighs under thirty ounces..." I would certainly hope a common egg weighed less than thirty ounces!(Maybe you meant three.)
