Another variation for eggplant soup is to use coconut milk and curry (add to sauteed onions or shallots, toss in the uncooked or roasted eggplant, cook until tender then puree.)  Lovely flavors with eggplant and the first time I succeeded in getting the husband to consume any. Good either hot or cold.</description>
