Love the post...We have a relative who WILL NOT WASH HER HANDS...rinse with water YES..refuses to wash with soap. The interesting thing is her father was a doctor. Needless to say we will not eat at her house. Eating at home with our zone of control over the food preparation is ok. I love to go to a picnic with my own food. I never feel safe with other peoples hands into my food. At University I always wondered about food prep. course work required training in how not to store foods. I have survived by my nose for food spoiling but have concerns in restaurants.

Love the site.

Hear Hear! I'm with your regarding safety first, but don't go overboard. I've learned to be very careful over the past four years. My twins were born premature and caution ruled our world for the first year. Then we became careful, though more realisticly after that. I just got food poisoning from a McDonald's yesterday. Definitely, keep the food in your own hands and kitchen. Avoid stupid things, eating food that's been in the sun for an excessive amount of time, and just exercise caution. Great idea for a recipe, too! -- Jean

It's funny - I learned in food-handling class that it's actually the cooked potatoes that cause the risk, and not the mayo! Apparently the mayo, even the homemade stuff without stabilizers/preservatives, is the least of our worries when it comes to spoilage. But everybody blames the mayo, so for a picnic scenario with worrywarts, you definitely made the right (and tasty-sounding) choice!

You know, I've found that even made with homemade mayonnaise, a good potato salad is just fine in a packed cooler. I really hate PSAs, and I especially hate that I feel as if I'll contract SARS at any moment from just clicking on a post or email news story. Come on CNN, don't you have anything else to report??
