Is it the same thing as Ricotta Salata? Supposedly basket cheese is particularly good on pizza rustica -- did your pizza qualify as pizza rustica? So many questions! Anyway I've begun documenting my search for good ricotta (a picture there of the basket cheese) on daveskitchen.com. Now I'll have to try the Tonjes cheese. I think I can make a case for including it in my Williamsburg ricotta search -- it's only a few L stops away!
