I love cooking with kale - it's such a delicious way to add a punch of nutrition to a meal. It's full of Vitamins A and C, as well as fiber, calcium and iron. Check out these other ideas for incorporating kale into your diet!

kale chips are a raw food classic!

try making them in a lower temp oven or if you have a dehydrator use that... retains more nutrients

Oh, this was delicious. I've made it twice now. The second time, I used one acorn squash, and one Pinata apple, which I seasoned very lightly and baked in the microwave. It was completely yummy, both times.

Oh those kale chips look so good! I'll have to try them out! And I did see some kale at the greenmarket on Monday, so maybe we'll get another week or two? I hope?

Also, never knew that about freezers - mine must be incredibly energy efficient. Although I imagine the time I spend with the door open trying to rearrange everything so I can shove another container in might negate that effect...

That sounds excellent, and I am definitely going to try this at home. March is "the cruelest month," huh? The last time you used those words, I blanked, but I did write 3 essays on it - you really *do* have t.s. eliot's "the wasteland" on your mind!

What a lovely soup! I am also making acorn squash soup today to get rid of my last squash. I am going to miss winter, even though I am ready to put away my heavy coat and do some work in the garden. Thanks for the great idea for using Kale, I will try that!

Hi Matt: Yes, I always make veggie broth with just those things, as well as celery (lots of their leaves). It's a great vice to have on hand and thaw whenever you need, and did you know that keeping your freezer stocked with containers and things helps it keep running at a lower energy level? Keep it stocked (pun intended)!
