Man, I love it when potatoes are described as "waxy". I know that it's to denote hard potatoes from grainier ones, but it just sounds so satisfying.

Which greenmarket do you get your cheap tomatoes from? The USQ ones are insanely pricey at times...

I loved the idea of a potato and tomato salad, and whipped one up for my lunch today! I didn't have any ricotta, so I mixed a small amount olive oil with some red wine vinegar with sage and pepper and used it as my "sauce". I also added roasted garlic and pine nuts. It's much more "Italian" tasting, but very very fresh. Thanks so much for the inspiration!

Great idea with the Ricotta.

I've been on a warm new potato salad kick with a fancy mustard/vinegar dressing for some time now.

Ooh, I hate me some mayo, which means, since I live in the Midwest, that I have avoided almost all potato and pasta salads. Only recently did I discover I can make a mean oil/vinegar based bowl of awesome. Can't wait to try this.
