Love this recipe! What is the lemon zest for? I'm afraid to add it because there are no instructions for it! Thanks!

I'm so glad I'm not the only one doing crazy things with risotto. Risotto is a blank palette. Kind of like tofu, only it tastes good. I've done a similiar recipe that I concocted using stilton cheese and walnuts along with the apples, then drizzling a little balsamic reduction over each serving. Before using chicken stock, try using a 1/4 cup apple cider or 100% apple juice as you would use white wine in a normal risotto recipe preparation, in the first reduction. Gives a deeper apple-y flavor to the dish. Other insane risottos I've tried: melon and prosciutto w/ basil; dried cherry and serrano ham.

I've had brie and green apples on the brain lately. My favorite brunch spot has a brie and green apple brioche french toast that I'm currently obsessed with. I like the idea of using this combo in a savory dinner entree. Thanks!
