		<description>I&#039;m so glad I&#039;m not the only one doing crazy things with risotto. Risotto is a blank palette. Kind of like tofu, only it tastes good. I&#039;ve done a similiar recipe that I concocted using stilton cheese and walnuts along with the apples, then drizzling a little balsamic reduction over each serving. Before using chicken stock, try using a 1/4 cup apple cider or 100% apple juice as you would use white wine in a normal risotto recipe preparation, in the first reduction.  Gives a deeper apple-y flavor to the dish. Other insane risottos I&#039;ve tried: melon and prosciutto w/ basil; dried cherry and serrano ham.</description>
