What a great recipe! I never would have thought to cook apples with tomatoes. Or chicken and apples for that matter.

I didn't try it with the couscous (I've never really liked it in the past). Any other suggestions in regards to sides?

Just this weekend I discovered the joys of making slow couscous. The fluffiness of the grains is something I never thought I'd be able to accomplish at home, but thanks to the cooking wisdom of Claudia Roden I did it! I love the idea of your chicken though... Perhaps next time!

This sounds delicious! I like the spice mix. I've been using fruit in savory dishes a lot lately. Mango salsa with salmon, pears with roasted pork loin, prunes with pork chops... You might also consider dried currants with the rice.
