It's funny because the other day I saw on a menu somewhere "oven dried tomatoes" and it suddenly occurred to me that sundried tomatoes must really be... sun dried. Okay, so that's a pretty stupid realization, but you know how some things just never occur to you? Yeah, that's me, but with almost everything. Though he doesn't mention it, I'd read somewhere that Roma/plum tomatoes were one of the lowest water content tomatoes out there, which is why they're good for guacamole or other items where tomatoes' water might leak out and ruin a dish, so maybe that makes them even better for drying? I'm totally going to try this. As soon as I can figure out how to get and keep my dog off my windowsills. That is so awesome.
