I really like substituting plain, thick greek yogurt for mayonnaise.  The taste is great, and I don&#039;t feel scared about eating it after riding on a hot subway, for instance.  But I have to mix up the sauce and the &quot;chunked goods&quot; in two distinct containers and combine just before serving.  the reason is that yogurt tends to separate, and that can be off- putting.</description>
